Plaid Coffee Roasters
Our story
Plaid Coffee is owned and run by Goodner, her son Trevor Taynor (the roaster), and her daughter Brooklyn Bertels. Our heritage is Scottish and Irish, and Scotland is a place the family has loved. Every roast is named for a place or character from that map.
Trevor also runs 222 Artisan Bakery, where the espresso bar is poured from a Plaid roast every day. A new dedicated Plaid shop is being built at 463 E Vandalia Street, in the historic Hi-Way Café building on Route 66.
Our beans
Our beans are sourced from all over the world, picked for their best representation of how they react to each specific roast. We constantly fine-tune to reach the inspiration we have for each concept.
Coffee for your business
If you want coffee for your company, your restaurant, or your cafe, we have the roasts plus the equipment and supplies to back them up. Reach out and we’ll figure out what your program needs.
Where to buy
Today, Plaid is poured and stocked at two Edwardsville retailers and two regional farmers markets. A dedicated Plaid shop on Vandalia Street is in construction.
The bakery Trevor also runs. Bags on the shelf and a Plaid roast on every espresso ticket.
Retail bags plus a coffee-flavored ice cream we built together with the Clementines team.
The Edwardsville farmers market. Find our stand on Saturday mornings during market season.
St. Louis' largest farmers market. Look for our stand among the producer rows on Saturday mornings.
The new Plaid shop, in the historic Hi-Way Café building on Route 66. A hand-painted Route 66 mural now covers the east wall, and construction is ongoing inside. Visible roaster room, Scottish-leaning menu, and a coffee bar in the original room.

Plaid Coffee is roasted in Edwardsville, Illinois. Every bag is small-batch roasted to order by Trevor Taynor and the family, then sold across the Metro East — Edwardsville, Glen Carbon, Troy, Maryville — and the greater St. Louis metro. It is a true local roaster, not a national brand shipping from a warehouse.
Retail bags at 222 Artisan Bakery and Clementines Ice Creamery in Edwardsville. Saturday-morning farmers markets at Goshen Market (Edwardsville) and Tower Grove Saturday Market (St. Louis). You can also order any roast online and have it shipped, or pick it up locally. Our own dedicated shop at 463 E Vandalia Street is in construction.
Yes. You can buy any roast by the bag online and have it shipped, or set up a subscription that arrives on your schedule with a subscriber discount. Choose a specific roast or let Trevor pick — the shop handles both.
Every bag is roasted to order in small batches, so it ships within days of roasting — not the weeks or months a grocery bag has been on the shelf. Plaid is a roaster, not yet a walk-in cafe; a dedicated Plaid shop is under construction at 463 E Vandalia Street. Until it opens, the freshest pour is at 222 Artisan Bakery, where every cup is a Plaid roast.
Plaid is owned by Goodner, her son Trevor Taynor, and her daughter Brooklyn Bertels. Trevor is the roaster, and he also runs 222 Artisan Bakery. Every Plaid bag is small-batch roasted by Trevor and the team.
Plaid is inspired by the family's Scottish and Irish heritage. As Goodner says, "Scotland is a place the family has loved." Each roast is named after a Scottish place or character: Highland, Isle of Islay, Loch, Pitlochry, Glasgow, Nessie, Big Ed (a nod to Edinburgh, Scotland's hilly capitol), and St. Andrews.

Half-caf coffee is a blend of regular and decaffeinated coffee, giving you about half the caffeine of a full cup. Our 1/2 Caf Pitlochry blends our St. Andrews decaf with a fully washed Bourbon varietal for sweet cocoa notes.
